So... I will begin with my first dish which became two dishes: Roasted Pepper Quinoa Salad (which later became Quinoa Tabouleh) I didn't photograph it but it looked super awesome!! I will post pics from now on I promise!! Here is the recipe:
Roasted Pepper Quinoa Salad
*Prepare a cup of rinsed quinoa in three cups of chicken or veggie stock. Cool and fluff.
*Roast three peppers (I used multicoloured) over flames until nicely charred. Cover and cool, then peel/rub skin off peppers. Chop and add to fluffed quinoa.
*To this mixture add chopped green onions, chives and a lovely tomato or two. A handful of fresh parsley, a little chopped garlic, the juice of one lemon and some extra virgin olive oil finish it off.
*At this point I added salt and pepper and ate it room temperature: Heaven!! It was equally lovely later on, chilled!!

Plans for today include quinoa risotto and vanilla quinoa pudding! Check in later today!
